Three Recipes That Our Family Never Gets Tired of Eating

I’m a busy mom of two who loves to cook! My husband is a chef, so I have learned a lot from him.

I used to be more adventurous and would try new recipes that I found on Pinterest every week. From time to time I will still try a new recipe, but more often than not I tend to stick with our family favorites. My husband is Guatemalan and our kids love his native cuisine. Rice and beans are definitely a staple in our house. My son is about to turn 3, so he can be a picky eater. My daughter is 11, so she’s not as picky as my son, but tends to prefer the family staples as well.

Family Favorites
One of the recipes my husband taught me is called “Jocon” which is chicken and rice with a tomatillo sauce, but our family calls it “chicken and green sauce”. Some people add jalapeños to the sauce for a little kick. My kids don’t do spicy so we don’t add them.


Chicken and Green Sauce/Jocon

  • 2 cups rice, cooked
  • 2 lbs. chicken thighs
  • 5-6 tomatillos (green tomatoes)
  • One bunch of cilantro
  • One bunch of scallions
  • 3 tablespoons chicken base
  • 2-3 potatoes, peeled and cubed
  • Blender

Instructions

  1. Cook the rice in one pot per the instructions.
  2. Boil the chicken in water in another pot.
  3. While the chicken is cooking, wash and cut the tomatillos into quarters and put them inside of the blender.
  4. Wash and cut the cilantro and scallions into smaller pieces and put them into the blender.
  5. Add a couple tablespoons of water to the blender.
  6. Turn blender on “puree” setting for a couple minutes.
  7. When the chicken is cooked, add the sauce to the pot. Let it cook for a few minutes.
  8. Add the cubed potatoes to the pot. Let it cook for another 10 minutes.
  9. Add chicken base to the green sauce for flavoring.
  10. Serve chicken over rice with green sauce.


Rice, so many possibilities

Our family loves rice. I like to mix different ingredients with the rice to give it some flavor. The rice recipes are very simple. You just cook the rice in water mixed with chicken base and then once it is cooked, add the remaining ingredients.

Mama Jen’s Rice

  • 2 cups rice
  • 3 tablespoons chicken base
  • 4 cups water
  • 2 cups heavy cream
  • 1 cup Parmesan cheese
  • 2 tablespoons butter
  • Salt (to taste)

Instructions

  1. Cook the rice in one pot per the instructions, but add the chicken base to the water.
  2. Once the rice is cooked, add the heavy cream, butter, parmesan cheese and salt.
  3. Enjoy!

Lime Cilantro Rice

  • 2 cups rice
  • 3 tablespoons chicken base
  • 4 cups water
  • 1 cup cilantro, chopped
  • ½ cup lime juice
  • Salt (to taste)

Instructions

  1. Cook the rice in one pot per the instructions, but add the chicken base to the water.
  2. Once the rice is cooked, add the chopped cilantro, lime juice and salt.
  3. Enjoy!
